My Life with Diabetes / Recipes
I'm a true family girl which means lots of friends and family get-together's when I'm not on tour equals delicious cooking, fun in the kitchen and loads of laughs. Diabetes doesn't have to mean boring, tasteless eating, just management of the sugar and carb levels. From time to time, I'll share my favorite recipes with you from over the years. Check out the one below... delicious and great for a crowd!

3-Cheese Chicken Cacciatore Manicotti

Ingredients:

nonstick cooking spray
1 box (8 ounces) manicotti
1 teaspoon olive oil
1 cup chopped onion
1 cup chopped plum tomatoes (approximately 2 tomatoes)
1 cup chopped green pepper
2 cloves garlic, minced
3 (4-ounce) boneless, skinless chicken breasts, cooked and diced
1 1/2 cups shredded reduced-fat, part-skim, low-moisture Mozzarella cheese
1 cup part-skim Ricotta cheese
1 egg, lightly beaten
3/4 cup grated Parmesan cheese, divided
1/2 cup fresh basil leaves, chopped
1/2 teaspoon salt
1/8 teaspoon black pepper
1 jar (26 ounces) low-sodium, fat free marinara sauce

Instructions:

1. Preheat oven to 350 degrees F. Spray a 13x9-inch baking pan with cooking spray; set aside. Cook manicotti 9 minutes according to package directions; rinse with cold water and drain.

2. Heat oil in a large skillet over medium heat. Add onion, tomato, green pepper and garlic; cook 5 minutes, stirring often, or until vegetables are softened.

3. In a large bowl, mix vegetables, chicken, mozzarella, ricotta, egg, 1/2 cup parmesan, basil, salt and pepper until mixed. Using a small spoon, fill each manicotti with about 1/2 cup mixture.

4. Pour 1/2 of the marinara sauce into prepared baking pan. Arrange filled manicotti over sauce and top with remaining sauce. Sprinkle with remaining parmesan. Bake, uncovered, for 30 minutes or until manicotti is heated through and sauce is bubbling. Cheesy and delicious.

Happy Friday!

Earlier this morning, I joined Jonathan at a breakfast honoring Florida’s Attorney General Bill McCollum. Bill is in a tough fight for Governor of Florida and we celebrated the final few days of his campaign at the Gun Club Café in West Palm Beach.

Joining us at the breakfast was America’s Mayor, Rudy Giuliani.  I had an opportunity to chat with Mayor Giuliani for a few minutes and he indulged me in a photograph before we each ate our breakfast and spilled food on ourselves.   It was also great to see our friends, Florida House of Representatives Majority Leader Adam Hasner and his wife Jillian.   Jillian joined Adam, Bill, and Rudy on the campaign trail, while taking off a few days as Campaign Manager for Meg Whitman who is running for the Governor of California.

Best wishes to all of my friends who are teeing off this morning at the Safeway LPGA Classic in Portland, Oregon.  While I miss playing, I am enjoying spending time at home as a newlywed and getting the house organized during our huge construction phase.
